Meet the Team


Hola Amigos, I'm Col! For as long as I can remember I have always loved to cook, and especially Mexican Food, even before I knew what true authentic Mexican Food was!

I am passionate about cooking authentic recipes that are not only tasty but also very healthy, which is another passion of mine, health and well-being.

Having been to Mexico 3 times and a 4th just around the corner, I've been blown away by all the amazing things you can fit inside a nixtimal tortilla.  After the last trip, I was more than inspired and knew I had to share what I had experienced back home in Oz. And this is how El Taco Loco was born!



Hola Chicos, I'm Jen! I have loved Mexican food for many years, I can remember back over 10 years ago now, one of my sister's friend's, making a layered Mexican dip for a birthday party and I just had to know the recipe.... That dip is now a big favourite amoung friends and especially when we have a fiesta, I'm asked if I've made 'my dip' lol.

I've always been drawn to colours and found I have a passion for styling/interior design, I lean more towards the Balinese, Bohemian, Boho chic/luxe & Hippie themes. Not knowing much about Mexico's textiles until I had been there, and time after time (well 3 times actually haha) I am more amazed by the colours, craftsmanship and quality of the Artisian's handmade work by generations of Mexican families.

I enjoy styling El Taco Loco's pop up stall and designing what I can elsewhere for the business.


You will also see Claire our Niece (our #1 Jarritos opener) working with us. ​We all look forward to you tasting our delicioso menu. Adios for now :)
